Mailbag Monday: Loss Of Alcohol In Wine?

Dear Alleigh:
I normally don’t finish a bottle of wine once it’s opened.  If I keep the wine in my refrigerator, does it lose alcohol after opening?

Ultimately, yes.  Once a bottle of wine is opened, the air causes the wine to breakdown, and part of that process includes the dissipation of alcohol.  After a few days, the wine reaches a point where it’s becomes undrinkable.

One of my first Mailbag Mondays (here) actually discussed the problem of unfinished wine.  And, of course dear readers, if you have other ideas on what to do with an open, unfinished bottle, I’d love to hear them!
