Mailbag Monday: Dump the Wine?

Dear Alleigh—
Every once and a while I open a bottle that I just don’t like.  I usually drink it anyway because I hate the idea of wasting wine.  Do you have suggestion on what to do with wine you don’t like drinking?

I truly hate when I open a bottle that I don’t like because it always hurts my heart to throw wine away.  However, that’s exactly what I do—dump it down the drain.

Some people will cook with wine they don’t like enough to drink, as long as the wine isn’t flawed.  I read a long time ago, though, that you should never cook with beer that you wouldn’t drink on its own because the food absorbs the flavors of the beer.  So, if you don’t like the flavors of the beer enough to drink, you probably won’t ike the flavors the beer brings to the dish you’re cooking.  Since that made sense to me, I adopted that as my philosophy with wine too.

I think that leaves me in the camp of tossing wine  I don’t like.  Don’t get me wrong, it’s hard to do.  But, it also gets a little easier every time you do it.  There are far too many good wines out there that I haven’t tried…life is to short to drink (or cook with) bad wine.
